The kohen comes from shevet Levi, who were blessed by Moshe Rabbeinu as יוֹר֤וּ מִשְׁפָּטֶ֨יךָ֙ לְיַֽעֲקֹ֔ב וְתוֹרָֽתְךָ֖ לְיִשְׂרָאֵ֑ל – “They shall teach Your ordinances to Jacob, and Your Torah to Israel…” (Devarim 33:10 VeZos HaBracha). Also in כִּֽי־שִׂפְתֵ֚י כֹהֵן֙ יִשְׁמְרוּ־דַ֔עַת וְתוֹרָ֖ה יְבַקְשׁ֣וּ מִפִּ֑יהוּ כִּ֛י מַלְאַ֥ךְ יְהֹוָֽה־צְבָא֖וֹת הֽוּא – “For a kohen’s lips shall guard knowledge, and teaching should be sought from his mouth, for he is a messenger of the Lord of Hosts” (Malachi 2:7).

A beard represents longevity.
41:00 – NOTE: The last words of Rabbi Shimon Bar Yochai zal were: כִּ֚י שָׁ֨ם | צִוָּ֣ה יְ֖הֹוָה אֶת־הַבְּרָכָ֑ה חַ֜יִּ֗ים עַד־הָֽעוֹלָֽם – “…for there HaShem commanded the blessing, eternal life” (Tehillim 133:30) to hint that he was departing from this world to enter another realm of life.
